Santa Fe Chicken Chili


                                                                    Santa Fe Chicken Chili
2 lb boneless skinless chicken breasts, cut into 1/2 inch cubes
4 medium sweet red peppers, diced
4 garlic cloves, chopped
2 large onions, chopped
1/4 cup olive or vegetable oil
3 tablespoons chili power
2 teaspoons ground cumin
2 cans (15 1/2 oz) kidney beans, rinsed and drained
1/4 teaspoon cayenne pepper
1 can (28) oz diced tomatoes, undrained
2 cans (14 1/2 oz each) chicken broth
1 jar (12 oz) salsa
1 package (10 oz) frozen corn
1/2 teaspoon salt
1/2 teaspoon pepper


In a 15 qt kettle or Dutch oven over medium heat, saute chicken, peppers, garlic, and onions in oil until the chicken is no longer pink and vegetables are tender, about 5-7 minutes.  Add chili powder, cumin, and cayenne pepper; cook and stir for about 1 minute. Add the tomatoes and broth; bring to a boil.  Reduce heat; simmer, uncovered for 15 minutes.  Stir in remaining ingredients; bring to a boil.  Reduct heat; cover and simmer for 10-15 minutes or until the chicken is tender.  Yield:  14-16 servings  (4 qts)

Great to have with corn bread, sprinkle cheese on top.  Sometimes I use pinto beans instead of kidney beans.

Fabric Bookmarks

Here are some fabric bookmarks I made for my daughter-in-laws that are school teachers. I loved playing with different designs. I fell in love with the rick rack and picking shears that I got off the internet. On both ends is the curtian fabric in their classrooms that I'm using for some bookmarks. I got fun fat quarters to make some for variety. I think you could just do anything here. (Christmas, Halloween, Valentine's, etc. ) Nice to give a book as a gift with a homemade bookmark.

Sunbonnet Sue Quilt


This is Eleanor Burns pattern of Sunbonnet Sue. This is hanging on my 1st granddaughters wall in her room, Ryley Jean. I now have 3 more to make for the other granddaughters. The quilting was done by a quilt shop in Dumas, Texas with the echo pattern.

Heart Quilt

Emily and I both made a
heart quilt. Emily did the
quilting on this quilt.
I love hearts and will
always cherish this one.
It is hung in my entry hall.
It has some slight shades
of yellow in the background
of the heart and my
wall is painted yellow.
Looks real nice on the wall.

Wall hanging in my sewing room


This is part of a quilt that my mom was making in the 80's. My sister Emily took it apart and put a border on it so each of us would have something from the quilt. I put mine on my wall in my sewing room which reminds me of my mom while I'm quilting. We lost our mom in 1982.

your block. I have a few
blocks I'm looking at
here for floor pillows
I'm working on for my
granddaughters.

machine. It's easy to
get to and saves on space
in my sewing room.
During the cold winters,
I spend a lot of time
